Strawberries & Cream Overnight Oats

 

Serves 1

For the overnight oats:

10g unsweetened coconut flakes
1⁄2 tsp flaxseed
30g oats (use gluten free if preferred)
25g strawberry or vanilla flavour whey or rice protein powder (optional) or use sweetener of your choice, to taste

1 tsp chia seeds
1⁄2 tsp vanilla extract
70g fresh strawberries, hulled and mashed
150ml unsweetened almond milk (or long life coconut milk drink)for the topping:
30g fresh strawberries, sliced or chopped
a drizzle of maple syrup or honey (optional)

Method:

Place the coconut flakes and flaxseed in a blender and blend until finely ground.

Transfer to a sealable container. Add the remaining overnight oats ingredients and stir until thoroughly combined.

Refrigerate overnight.
Stir well. If the mixture is too thick, add a splash of chilled milk and stir well. Store any leftovers in an airtight container and refrigerate for up to 3 days.
