Serves 2
Ingredients:
375g lean beef stir fry strips 1 tbsp ground rice flour
2 tsps sesame or coconut oil1⁄2 a small red onion, sliced
3 garlic cloves, finely chopped
120ml beef stock (made with one organic stock cube)
160g Tenderstem broccoli, stems cut in half
2 tsps honey (or use sweetener of your choice)
1 tbsp soy sauce or tamari
1⁄2 tsp ground rice flour (optional - makes for a thicker sauce) a sprinkle of sesame seeds
Method:
Heat the oil in a wok or frying pan over a medium heat. Add the beef and fry for 2 minutes, stirring frequently until browned all over. Transfer to a plate and set aside.
Add the onion to the wok or frying pan and fry gently for 2 minutes, stirring frequently.
Add the garlic and fry gently for 2 minutes, stirring frequently.
Add the broccoli and stock. Stir and cook for 5 minutes.
Add the soy sauce, honey and rice flour (if using) to the pan. Stir and simmer for 5 minutes.
Add the beef back into the pan. Stir well. Taste the sauce and add salt and pepper if required.
Serving suggestion:
Serve on a bed of steamed rice.
Store any leftovers in an airtight container and refrigerate for up to 3 days or freeze on same day.
