Overnight Chia Breakfast Parfait

 

Serves 1

Ingredients:

40g chia seeds
25g vanilla flavour whey or rice protein powder

130ml unsweetened almond milk

for the parfait layer:
80g frozen mango chunks, blended

for the topping:

20g fresh blueberries

a sprinkle of flaked almonds

Place the chia seeds, protein powder and almond milk in a sealable container and stir well. Seal container and refrigerate overnight.

Stir well and add more milk, if required.

Spoon half of the chia mixture into a dessert glass.

Add the parfait layer.
Top with the remaining chia mixture.
Top with the fresh berries and almonds.

Cover and refrigerate any leftovers for up to 1 day.
