Halloumi With Avocado Smash

 

Serves 1

Ingredients:

60g halloumi cheese, sliced

70g ripe avocado
juice of 1⁄2 a lime
a pinch of paprika

1 tbsp fresh coriander, finely chopped

Method:

Prepare a medium grill. Place the halloumi slices on a grill tray lined with tin foil. Grill for around 5 minutes on each side, or until golden.

Mash the avocado in a bowl with the lime juice, coriander and paprika. Transfer the cheese to a plate. Top with the avocado smash. Serve. Consume immediately.

Serving suggestion:

Serve on a slice of toasted rye bread (or gluten free bread) with a spread of butter, or with steamed vegetables of your choice.
