Goats Cheese & Walnut Caramelised Onion Quiche

 

Makes 4 slices

Ingredients:

a small amount of butter or coconut oil, to grease dish
1 tsp ghee or coconut oil
1 small red onion, finely sliced
5 eggs
2 egg whites
a pinch of ground black pepper
a pinch of sea salt
1 tbsp fresh chives, chopped
15g walnuts, roughly chopped
50g Goat’s cheese or feta, crumbled
 
Method:
Preheat oven to 180 ̊C/350 ̊F.
Lightly grease the base and sides of a 15x15cm oven dish with butter/coconut oil.
Melt 1 tsp ghee/oil in a frying pan over a medium heat.
Add the onion and fry gently for 8-10 minutes, stirring occasionally until caramelised.
Transfer to the oven dish and spread evenly to cover the base.
Crack the eggs and egg whites into a large jug. Add the salt and pepper and whisk with a fork. Stir in the chives.
Pour into the oven dish.
Sprinkle the walnuts and cheese over the top.
Bake for 20-25 minutes, or until firm in the centre.
Allow to cool for 10 minutes.
Cut into 4 pieces.
Serve.

Store any leftovers in an airtight container and refrigerate for up to 3 days.
