Creamy Coconut Porridge

 

Serves 1

Ingredients:

65g oats (use gluten free if preferred)
120ml unsweetened coconut milk (dairy free alternative longlife drink)

70ml tinned unsweetened coconut milk
11⁄2 tsps desiccated coconut
for the topping:
1⁄2 tsp desiccated coconut
1 tsp shelled hempseed or flaxseed
1 tsp cocoa nibs

Method:

Place the oats, tinned coconut milk and coconut milk drink in a saucepan over a medium heat. Cook for 3-4 minutes, stirring frequently until thick and creamy.

Remove the saucepan from the heat and stir in the desiccated coconut. Transfer to a serving bowl.


Add the topping ingredients. Taste and add sweetener if required.

Serve. Consume immediately.
