Ingredients:
180g Greek yoghurt (use dairy free if preferred)
20g vanilla flavour whey or rice protein powder
1 tsp vanilla extract
2 tsps chia seeds
1⁄2 tsp ground nutmeg
1⁄2 tsp ground cinnamon
1 tsp ground ginger
1⁄2 tsp ground black pepper
1⁄2 tsp ground cardamom
for the topping:
50g ripe banana, sliced
1 tsp cocoa nibs
1⁄2 tsp flaked almonds
Method:
Mix the yoghurt and protein powder in a bowl.
Add the chia seeds and vanilla extract. Allow to stand for 10 minutes.
Mix the spices in a separate bowl. Sprinkle quarter of the mixture over the yoghurt and stir. Taste and add more spice mix if required.
Transfer to a serving bowl. Add the toppings and serve.
Store the remaining chai mix in an airtight container for up to 1 month. Store any remaining protein yoghurt in an airtight container and refrigerate for up to 2 days.
