Berry Chia Pudding

 
Serves 3
 
Ingredients:
100g ripe banana
140ml unsweetened almond milk
100g frozen strawberries or blueberries
1⁄2 tsp vanilla extract
2 tbsps chia seeds
140g Greek yoghurt (use dairy free if preferred)
25g vanilla flavour whey or rice protein powder
 
Method:
Place all of the ingredients in a blender jug and blend well until creamy.
Allow to stand for 10-20 minutes to thicken.
Add more chia seeds if required, to achieve desired consistency.
Serve topped with fresh berries.
Store any leftovers in an airtight container and refrigerate for up to 24 hours.
