Avocado, Pesto & Egg Breakfast

 

Serves 1

Ingredients:

1 tsp coconut oil
1 egg
a small handful of rocket leaves
5 cherry tomatoes, halved
1⁄2 a medium-sized avocado, sliced
1 tbsp fresh lemon juice
a pinch of sea salt and ground black pepper
1 tsp green pesto

Method:

Heat the oil in a frying pan over a medium heat.
Crack the egg into the pan and fry for 2-3 minutes, or until cooked to your liking.
Assemble the remaining ingredients onto a plate.
Top with the fried egg.
Serve.
Consume immediately.
